My daughter and I were planning meals and desserts for the next couple weeks, taking into consideration the family that we bring food to twice a week. Last Thursday the dessert for this family was a pan of warm, melty, gooey, delicious brownies. Perfect, right? What gets better than that, you ask? Well, guess what people? The mom in this family is with me 100%, but the children — the children — are not brownie fans. I’ll sit back and allow that crazy fact to sink in.

You okay? I know… hard to wrap your brain around.
So there we were planning out desserts. Maybe something fruity would be good. I have a few recipes that might work. And the kids eat cookies. That’s awesome… we have tons of cookie recipes. Then, while shopping, my daughter had the idea that they may like rice crispy treats. She purchased the ingredients, came home, and went to work.
When she started making them for today’s meal, she wanted to add a little something special, so she tossed in some sprinkles. They turned out so colorful and fun!
Found out tonight that these rice crispy treats were a hit with the anti-brownie kids. Yahoo!

Rice Crispy Treats
3 tablespoons butter
1 10-ounce package regular marshmallows (or 4 cups mini marshmallows)
6 cups rice crispy cereal
Choose one method:
#1: Use a saucepan to melt the butter over low heat. Add marshmallows and stir until they are all melted. Remove from heat.
#2: (my daughter’s preferred method) In a microwave-safe bowl heat the butter and marshmallows on high for 2 minutes. Stir well. If smooth, continue. If not, microwave for one additional minute, then stir until smooth.
Once you’ve picked your method and have accomplished this task (the butter and marshmallows mixture is smooth) stir in the cereal. If desired, stir in 1/4 to 1/2 cup sprinkles as well (or mini-chocolate chips).
Use a buttered spatula or wax paper or your hand in a plastic zipper baggie to evenly press the sticky mixture into a lightly greased or parchment paper lined 13 x 9 x 2-inch pan.
Cool. Cut into squares.
Recommended that they be served the same day.
